Sisters Kathryn and Laura Pekarik had a longstanding passion for baking with a particular fondness for all things cupcake. However, it never occurred to them to go pro with their passion until 2010. Kathryn was diagnosed with non-Hodgkin’s T-cell Lymphoma that May and needed help paying for treatment. The solution? A bake sale. Laura baked 250 cupcakes for the event, and these pristine confections sold out fast. The positive response inspired her to open up Cupcakes For Courage. Now, Kathryn is in remission and Laura’s food truck is going strong. She rolls around Chicago, IL whipping up sweet treats while raising money for charities and nonprofits dedicated to helping cancer patients.
When Laura first started out, she had four original cupcake recipes to sample. Now, her menu sports a bevy of concoctions in a variety of irresistible flavors. From vanilla fudge to chocolate peanut butter cup to French silk pie, there’s something for everyone here. Over the years, Laura’s moved beyond cupcakes alone. You’ll find a host of other sweet things like cakes and pastries. There’s also an entire menu of savory fare, from sandwiches to omelets to English muffins. Stomach rumbling?
