Chris Johnson was inspired by his favorite childhood foods – mac and cheese, chicken tenders, french fries, and of course grilled cheese – when he decided to open up Cheesie’s. After 14 years spent in the restaurant industry working for others, he felt it was high-time he take a leap of faith and go at it on his own. Believe us, the city of Chicago, IL is lucky for that. Since its opening in 2011, Cheesie’s has become a staple of the late night food scene throughout the Windy City. Sporting three locations, it’s now gone mobile with its own food truck that pops up at events, bringing a needed dose of decadence for cheese-loving residents.
The menu offers a good old-fashioned grilled cheese sandwich, The Classic, which is a more than respectable choice in its own right. After all, the tried-and-true mashup of bread and cheese is timeless for a reason, right? However, Cheesie’s also sells loads of epic takes on all things grilled cheese. A grilled cheese sandwich stuffed with french fries, bacon, and chives? What about one with bleu cheese crumbles, tater tots, and hot sauce?
