When Jessica Stotler began selling Peruvian-style fruit popsicles at a construction site in 2015, they were an immediate hit. Named for the blue umbrella under which she sold her popsicles, Umbrella Azul has since grown to a full-service catering operation and pop up, and Chicago has taken notice.
She’s cooking all kinds of Peruvian classics here, like salchipapas and anticuchos, but no matter which direction you go, you’ll need some empanadas on the side. More of a sandwich vibe? The lomo saltado is hard to top, and same goes for the salted pork tenderloin sando. There’s pretty much no way you can mess this up, so what are you waiting for?
